      Experts in agitation and mixing, INOXPA designed and manufactured a complete installation based on the customer’s needs, having performed tests at their pilot plant beforehand.

      Furthermore, the technical team is vastly experienced in the bakery industry and industrial production of baked goods, which helped when designing a plant to fit the production centre’s requirements.

      This involves using one reactor with an agitation system, specially designed and manufactured by INOXPA, to mix water, flour and yeast. In the next 3 reactors the fermentation temperature is controlled to obtain a high quality product. The fermentation tanks are fitted with aseptic sampling points to monitor pH and acidity.

      The complete sourdough plant with CIP, fed by an automated solids dosing line also installed by INOXPA, includes the following components:

      • Weighing and dosing system for flour, water and yeast.
      • 5000 litre preparation reactor.
      • 3 x 6000 litre fermentation tanks.
      • Hot and cold water basins for temperature control in the reactors.
      • Sampling point in the reactors for measuring pH and acidity in real time.
      • Insulated yeast dosing loop.
      • Metal structure with access to the upper part of the skids.
      • Stainless steel valves and instrumentation.
      • CIP system for cleaning the sourdough plant.
      • Complete automation and control via an electrical panel.

      System controlled by temperature sensors throughout the process, bringing higher quality to the fermentation and dosing process.

      Full automation to reduce any potential human error and avoid repetitive tasks for operators.

      Skids with ATEX protection to ensure suitability for very complex settings due to the presence of dust in the atmosphere.
